Chicken in a Creamy Mustard Herb Sauce

  • 1 1/2 lbs chicken breast, 4 pieces
  • 7 cups button mushrooms
  • 1 cup green onion, sliced thin
  • 1/3 cup chicken stock
  • 2/3 cup Ideal Protein Honey & Dijon Dressing
  • 1/2 cup dijon mustard
  • 2 tbsp olive oil
  • 2 clove garlic
  • 1 tbsp fine herbs, finely chopped
  • pinch sea salt and pepper


  1. Heat 1 tablespoon of olive oil in non-stick pan. Cook chicken for 10 minutes until browned on both sides. In same pan, add 1/2 cup green onions and cook for 1 minute. Add stock and bring to a boil. Slow cook for 4 minutes. Reduce liquid to 1 tablespoon.
  2. Mix dressing and mustard in a bowl. Slowly add the warm sauce from the pan on the bowl.
  3. Mix well. Return sauce to pan and let simmer (do not boil!) for an additional 5 minutes. Add herbs.
  4. Just before serving, warm 1/2 tablespoon of olive oil in a skillet. Add mushrooms, sauté until soft. Add remaining green onions and garlic. Cook for 2 minutes.
  5. Arrange mushrooms on the plate. Add a slice of chicken breast and top with sauce.
