Curry Mahi-Mahi Salad

A nice way of turning a simple fish into a tasty salad rich in nutrients. You may use any leftover cooked fish in this recipe.

Ingredients

  • 2 lbs mahi-mahi, cooked
  • 1 cup celery, minced
  • 1 cup green onion
  • 1 cup green peppers
  • 1 cup radish
  • 1 tsp curry powder
  • 4 cups spinach, fresh
  • 1 tbsp lemon juice
  • 2 tbsp Ideal Protein Italian Dressing
  • 2 tbsp Ideal Protein Oriental Sesame Sauce
  • 3/4 tsp curry paste
  • sea salt, to taste
  • ground pepper, to taste

Directions

  1. Mix celery, green onions, green pepper, radish and fish.
  2. Add IP Italian Dressing and IP Oriental Sesame Sauce, lemon juice, curry paste and pepper. Mix well.
  3. Place on a bed of fresh spinach. Sprinkle with curry powder.
