Easy Tilapia Chowder

Ingredients

  • 1 3/4 lbs tilapia
  • 1 cup fish stock
  • 2 cups fennel
  • 2 celery, diced
  • 2 zucchini, diced
  • 2 crushed tomatoes
  • 2 tbsp olive oil

Directions

  1. Sauté celery and green onions in olive oil until golden.
  2. Add fennel and fish stock.
  3. Simmer for 20 minutes or until vegetables are tender.
  4. Add crushed tomatoes and zucchini.
  5. Cook for an additional 5 minutes (add water if too thick).
  6. Add tilapia and simmer for 5 more minutes until fish is cooked.
  7. Serve very hot.
