Halibut Marengo Style

You may replace the crushed Tomato with Ideal Protein’s Tomato and Basil soup. Remember it will increase the nutritional facts accordingly.


  • 2 lbs halibut, steaks
  • 4 cups mushrooms, cut in 4
  • 2 cups celery root, small cubes
  • 2 tsp lemon juice
  • 2 cups green onion, finely sliced
  • 1 tbsp thyme, finely chopped
  • 2 tbsp parsley, finely chopped
  • 1 cup tomatoes, crushed
  • 2 tbsp olive oil
  • sea salt and pepper, to taste


  1. Sear halibut in olive oil.
  2. Remove from pan and set aside.
  3. In the same pan, sauté mushrooms until brown.
  4. Add celery root and green onions, cook covered until tender.
  5. Add crushed Tomato.
  6. Add fish, cover and simmer for 8 minutes or until fish is cooked.
  7. Remove from heat.
  8. Add parsley and thyme, cover and set aside for 10 minutes.
  9. Adjust seasoning with salt, pepper and lemon juice if needed.
  10. Serve the fish on a bed of vegetables and top with sauce.
