Hearty Cod and Vegetable Soup

This one-pot, cod soup with vegetables is easy to make and can be on the table in under an hour. Enjoy this hearty fish- based soup!

Ingredients

  • 2 lbs cod, cubed
  • 2 cups cauliflower
  • 2 cups zucchini, diced
  • 2 cups celery root, diced
  • 2 cups green onions, finely chopped
  • 2 tbsp garlic, minced
  • 1 tbsp basil, crushed
  • 6 oz Ideal Protein Oriential Sesame Sauce
  • 1 hot pepper, dash
  • 1/4 cup olive oil
  • 3/4 tsp sea salt

Directions

  1. Slowly cook green onions in olive oil.
  2. Add zucchini and celery root.
  3. Add garlic, Oriental Sesame Sauce and 1 cup of water.
  4. Add cauliflower florets and bring to a boil.
  5. Add hot sauce and salt.
  6. When vegetables are cooked, add bite-sized fish.
  7. Let simmer until fish is tender.
  8. Adjust seasoning.
  9. Serve very hot.
