Meatballs in Mushroom Sauce

Ingredients

  • 1 1/4 lbs ground beef extra lean, minced
  • 1/2 packet Ideal Protein BBQ Crisps, crushed
  • 2 packets Ideal Protein Mushroom Soup, prepared
  • 4 cups mushrooms
  • 1 cup enoki mushrooms
  • 1 cup oyster mushrooms
  • 2 cups green onions, sliced
  • 1 tsp olive oil
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Preheat oven to 450 degrees.
  2. In bowl, mix beef, Crisps and 1/2 cup of mushroom soup.
  3. Shape mixture into approx. 32 meatballs and place on greased oven-safe dish.
  4. Cook for 8 minutes, or until cooked.
  5. Drain all fat.
  6. Prepare sauce by sautéing mushrooms in olive oil.
  7. Add green onions, remaining mush- room soup and season.
  8. Serve meatballs with mushroom sauce.
