Minestrone Style Soup

Our recipe is the perfect fresh Minestrone Style Soup that combines a variety of vegetables with the right amount of prosciutto to create a thick tasty soup. Garnish with basil and enjoy!

Ingredients

  • 1 lbs prosciutto, julienned
  • 1 packet Ideal Protein Pancakes, prepared, sliced fine
  • 1 cups vegetable bouillon
  • 2 cups celery stalk, sliced
  • 1 cup radish, sliced
  • 1 cup green peppers, sliced
  • 1 cup green onions, sliced
  • 1 cup leek, white part only
  • 2 cloves garlic, crushed
  • 1 tbsp basil
  • 1 bay leaf
  • 2 cups crushed tomatoes
  • 1 tbsp sea salt
  • 1 tsp pepper

Directions

  1. Sauté garlic, green onions, celery and leek.
  2. Add green pepper.
  3. Add crushed tomato and vegetable stock.
  4. Add 3 cups of water and bay leaf.
  5. Cook for 25 minutes.
  6. Add radish, prosciutto and cook for an additional 10 minutes.
  7. Adjust seasoning.
  8. Add pancakes and basil just before serving.
