Pesto Chicken

  • 1 3/4 lbs chicken breast, 4 pieces
  • 8 basil leaves, chopped fine
  • 8 cups bok choy, cut in 1/2” pieces
  • 2 tsp olive oil
Pesto Sauce
  • 2 tbsp garlic, crushed
  • 6 tbsp basil leaves, chopped fine
  • 4 tbsp parsley, chopped fine
  • 1 tbsp Ideal Protein Italian Dressing
  • 1 tbsp olive oil
  • sea salt and pepper, to taste


  1. Blend all pesto sauce ingredients in a mixer until smooth.
  2. Set aside.
  3. Boil bok choy in salted water.
  4. Cool in cold water, drain and set aside.
  5. Heat olive oil over medium heat.
  6. Fry basil leaves and set aside.
  7. Keep one teaspoon of this olive oil.
  8. Add chicken and cook over medium heat for 20 minutes.
  9. Remove from pan and drain fat.
  10. Add water to the pan and bring to a boil until reduced by half.
  11. Add pesto and dip.
  12. Simmer for 2 to 3 minutes.
  13. Reheat the chicken and the bok choy in the pesto sauce and serve.
