Pork Meatballs with Sweet-Sour Sauce

Ingredients

  • 2 lbs pork loin, ground
  • 1 packet Ideal Protein Apple and Cinnamon Soy Puffs, crushed
  • 1/2 cup egg Whites
  • 6 cups celery root, 1″ cubes
  • 2 cups green onions
  • 4 tbsp Ideal Protein Oriental Sesame Sauce
  • 2 tbsp olive oil
  • 4 tbsp cider vinegar
  • 1 tsp garlic powder
  • 1 tsp garlic salt
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Heat oven to 400 degrees.
  2. Mix ground pork with Puffs, egg whites, garlic powder and garlic salt until well mixed.
  3. Shape into 1 1/2” balls (for ease in shaping meatballs, wet hands slightly).
  4. Bake in ungreased pan until brown, 15 to 20 minutes.
  5. Sauté celery in olive oil.
  6. Season.
  7. Place in oven safe pan and stir regularly.
  8. When tender, remove from oven.
  9. Add sliced green onions.
  10. Stir well and keep warm until service.
  11. When meatballs are cooked, remove from pan and set aside.
  12. Drain fat and bring 1 cup of water to a simmer to dissolve drippings.
  13. In another pan, add Oriental Sesame Sauce and vinegar.
  14. Bring to a boil.
  15. Add drippings (liquid from the meatball cooking pan).
  16. The sauce should coat a spoon.
  17. Simmer for 5 minutes.
  18. Put meatballs into the sauce and reheat.
  19. Coat with sauce and serve with celery root.
