Roast Beef with Mustard Celery Root Purée

Ingredients

  • 1 1/4 lbs beef tenderloin, lean
  • 2 oz radish sprouts
  • 2 cups celery root, cubed
  • 4 cups Ideal Protein Honey & Dijon Dressing
  • 3 tbsp olive oil
  • 2 tbsp dijon mustard
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Season beef.
  2. Sear in hot olive oil.
  3. Bake in a 400-degree oven for 40 minutes – or until desired doneness.
  4. Remove from pan and keep warm for 15 minutes.
  5. Cook celery root in salted, boiling water.
  6. Drain.
  7. Purée.
  8. Add mustard, 1 tablespoon olive oil and dressing.
  9. The purée should be light and creamy.
  10. Garnish with radish sprouts.
