Sautéed Chicken Liver with Cauliflower Purée

Ingredients

  • 1 3/4 lbs chicken livers, cut into 1” pieces
  • 7 cups cauliflower, cut into small pieces
  • 1 cup mushroom, sliced
  • 2 tsp lemon juice
  • 2 tsp garlic, minced
  • 1 tsp rosemary
  • 2 tbsp Ideal Protein Honey & Dijon Dressing
  • 2 tbsp olive oil
  • 2 tsp onion powder
  • sea salt and pepper, to taste

Directions

  1. Cook cauliflower in salted, boiling water until (just) soft. Drain well and purée.
  2. Add Honey Dijon Dressing. Set aside.
  3. In a pan, heat oil on medium-high temperature. Add liver, mushrooms, onion and garlic and cook until mushrooms change color.
  4. Add rosemary and lemon juice. Salt and pepper to taste and cook for an additional 1 to 2 minutes.
