Steamed Mussels with Wasabi

Ingredients

  • 2 lbs mussels
  • 6 cups soybean sprouts
  • 2 cups leek, chopped
  • 1 tbsp lemon juice
  • 1 tbsp ginger, finely chopped
  • 1 tsp coriander, finely chopped
  • 1 tsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp wasabi
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Slowly cook leek in olive oil for 5 minutes.
  2. Add ginger and cook for an additional minute.
  3. Add mussels, 1 cup of water, lemon juice, soy sauce and wasabi.
  4. Bring to a boil, turn heat off.
  5. Serve the washed soybean sprouts in a large bowl, add the boiling juice of the mussels.
  6. Add mussels.
  7. Sprinkle with coriander.
  8. NOTE: If you enjoy the flavor of wasabi, you may add an additional teaspoon.
