Stuffed Apple Flavored Pork Loin

Ingredients

  • 1 lbs pork loin
  • 1/2 lbs ground pork
  • 1 1/2 cups chicken stock
  • 1 packet Ideal Protein Apple and Cinnamon Soy Puffs, crushed
  • 6 cups red cabbage, sliced
  • 1 cup green peppers, chopped
  • 1 cup green onions, finely chopped
  • 2 tbsp parsley, finely chopped
  • 2 tsp olive oil
  • sea salt, to taste
  • pepper, to taste

Directions

  1. In a skillet, heat olive oil on medium heat and cook green onions with peppers for 4 minute
  2. Add ground pork.
  3. Mix well and cook on low heat for 5 minutes.
  4. Add soy puffs crushed and cook for 2 minutes.
  5. Preheat oven to 350-degrees.
  6. Cut pork loins lengthwise in half and garnish with mixture.
  7. Roll and attach with string.
  8. In a skillet, heat olive oil at medium heat and sauté pork loins.
  9. Cook in oven for 25 to 30 minutes.
  10. Set aside in hot serving dish.
  11. Add remaining chicken stock.
  12. Slowly cook red cabbage in olive oil.
  13. Add 1 cup of chicken stock.
  14. Cover and cook in the oven until cabbage is tender.
  15. Season.
  16. Sprinkle with parsley.
