Taco Pork Skillet

The flavours of pork, green peppers, zucchini, watercress and Italian dressing will taste great wrapped in an Ideal Protein Pancake!

Ingredients

  • 1 1/2 lbs pork tenderloin, cut into strips
  • 2 packet Ideal Protein Pancake Mix, prepared
  • 4 cups green peppers, cut 1/2″ thick
  • 2 cups zucchini
  • 2 cups watercress lettuce
  • 2 tbsp Ideal Protein Italian Dressing
  • 2 tsp olive oil
  • 1 oz taco seasoning mix
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Season pork with taco seasoning.
  2. Add green peppers.
  3. After 2 minutes, add zucchini, 1/2 cup water and dressing.
  4. Mix well and bring to a boil.
  5. Reduce heat to medium and cover.
  6. Simmer for 5 minutes.
  7. Let stand for 5 minutes.
  8. Spoon meat into Pancakes and wrap.
  9. Place on greased baking pan and bake in a 375-degree oven for 5 minutes until very hot.
  10. Serve with watercress or any other green salad.
  11. NOTE: A Mexican flavored dish that will please the whole family.
