Turkey Casserole Mediterranean Style

  • 1 1/2 lbs turkey breast, 4 pieces
  • 1/4 tbsp chicken stock
  • 4 cups green peppers, cut 1/4” thick
  • 4 cups zucchini, cut 1/4” thick
  • 1/4 cup lemon juice


  1. Sauté turkey in olive oil in a wok or pan.
  2. When half cooked, add peppers and season with onion powder.
  3. Turn regularly until turkey is no longer pink.
  4. Add zucchini, lemon juice, garlic, oregano and chicken stock and cook for an additional 3 to 4 minutes or until vegetables are tender but not overcooked.
  5. Remove from heat.
  6. Add parsley and serve.
