Turkey en Papillote with Vegetables

Ingredients

  • 1 1/2 lbs turkey breast
  • 4 cups broccoli
  • 4 cups zucchini, diced
  • 2 cups mushrooms, sliced 1/4″ thick
  • 1 tsp thyme leaves
  • 1 cup crushed tomato
  • 3 tbsp olive oil
  • 3 tsp dijon mustard
  • 1 tbsp mustard powder
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Sauté zucchini in olive oil.
  2. Season and set aside.
  3. Sauté mushrooms in same pan.
  4. Set aside.
  5. Season the turkey and baste with mustard.
  6. Cut aluminum foil into a 12” square.
  7. Add turkey, zucchini, mushrooms and crushed tomato.
  8. Sprinkle with thyme and drizzle with olive oil.
  9. Salt and pepper to taste.
  10. Close the foil to a hermetic square.
  11. Bake in oven for 30 minutes at 375 degrees or until turkey is cooked and still juicy.
  12. Dissolve mustard powder in 4 cups of water.
  13. Bring to a boil and add salt.
  14. Cook the broccoli in this liquid.
  15. Serve the turkey and vegetables with the broccoli.
