Turkey Marmite

Ingredients

  • 1 1/2 lbs turkey breast
  • 1/4 lbs ham
  • 4 cups chicken broth, fat free
  • 4 cups zucchini, sliced
  • 2 cups celery, cubed
  • 2 cups broccoli, chopped
  • 2 tsp thyme leaves, chopped fine
  • 1 cup crushed tomato
  • 2 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp sage
  • 1 tbsp cumin

Directions

  1. In a slow cooker, combine turkey, ham, broth, celery, crushed tomato and seasoning.
  2. Cover and cook on HIGH for 4 hours.
  3. Add broccoli and cook, covered for an additional 30 minutes or until all vegetables are tender.
  4. Sauté zucchini in 1 teaspoon of olive oil.
  5. Add just before serving.
