Vietnamese Scallops

Ingredients

  • 2 piece green onion, chopped
  • 1 tbsp garlic, minced
  • 2 tsp ginger, minced
  • 2 tsp stevia
  • 2 tbsp reduced sodium soy sauce
  • 1 tbsp tamari
  • 1 tbsp lime juice
  • 3 cups tagliatelle zucchini, from about 2 medium zucchini
  • 8 oz bay scallops, cooked
  • 1 cup radish, slivered
  • 3 tbsp cilantro, chopped

Directions

  1. Combine green onion, garlic, ginger, soy sauce and stevia in a small saucepan. Heat over medium heat until it starts to sizzle.
  2. Add zucchini, tamari, lime juice, scallops, and radishes and cook until soft. Remove from heat then put in a bowl, add cilantro and serve.
