Zucchini Gratin with Ham

  • 1 1/3 lbs ham, thinly sliced
  • 8 cups zucchini, sliced 1/2″ thick
  • 2 garlic bulbs
  • 1 tsp rosemary, chopped fine
  • 1 1/2 tbsp olive oil
  • sea salt, to taste
  • pepper, to taste


  1. Roast garlic: Cut the top of the head of garlic and coat with 1 tablespoon of olive oil.
  2. Bake in a 375-degree oven for 40 minutes or until garlic is tender.
  3. Remove from shell and crush.
  4. Sauté zucchini in olive oil.
  5. Drain well.
  6. Layer a lightly greased baking dish with zucchini, overlapping the slices.
  7. Season and add rosemary and the garlic purée.
  8. Layer with ham, then with another layer of zucchini.
  9. Drizzle with olive oil and broil until zucchini is cooked.
