Asparagus Soup

Ingredients

  • 1 1/2 lbs ham slices extra lean, julienned
  • 6 cups chicken stock
  • 6 cups asparagus
  • 2 cups green onions
  • 2 tbsp dill
  • 2 tsp olive oil
  • 2 tsp caraway seed
  • sea salt and pepper, to taste

Directions

  1. Cut asparagus into small pieces. Set tips aside
  2. Cook asparagus tips in boiling stock. Set aside
  3. Slowly cook green onions and caraway in olive oil
  4. Add asparagus pieces
  5. Add stock
  6. Cook for 45 minutes. Blend. Pass the soup through a sieve
  7. Add ham and cooked asparagus tips
  8. Serve very hot
