Basil and Tomato Veal Scallops

Ingredients

  • 2 lbs veal sirloin, thinly sliced
  • 8 cups broccoli
  • 1 clove garlic, peeled
  • 2 cups crushed tomatoes
  • 1 bunch fresh basil, chopped
  • 4 tbsp olive oil
  • sea salt, to taste
  • pepper, to taste

Directions

  1. Cook broccoli in salted, boiling water.
  2. Heat 2 tablespoons of olive oil with garlic for 5 minutes.
  3. Remove garlic and set aside.
  4. Heat 2 tablespoons of olive oil in skillet at medium-high heat.
  5. Add crushed tomato and fresh basil.
  6. Cook veal for 3 to 4 minutes on each side.
  7. Serve with broccoli.
  8. Drizzle with garlic olive oil and season.
